The temperature of the crayères, their constant hygrometry, and the calm that reigns there make it the ideal place for the production of champagne.

In 1909, Veuve Clicquot acquired old chalk pits on the outskirts of the city of Reims, under the Saint-Nicaise hill. Cellars were added to the original medieval galleries to expand the bottle storage capacity. This underground network of twenty-four kilometers, located twenty meters underground, is the most extensive and most dense of all the Champagne Houses in Reims. These underground quarries are listed as a UNESCO World Heritage Site.
